Method

  1. Slice the ripe mango, discard the seed, and cut the flesh into smaller bits

  2. Grind the mango pieces into a fine puree using a mixer jar.
  3. Strain curd through a cloth to remove extra moisture, leaving thick curd.
  4. In a bowl, combine hung curd, powdered sugar, and cardamom powder.
  5. Use a hand blender or whisk to blend the mixture until smooth.
  6. Add the mango puree to the mixture and combine until well mixed.
  7. Fill 3/4 of a glass with shrikhand, layer with mango bits, and repeat.
  8. Top with mango bits and saffron strands; chill before serving.
