Plump mushrooms are first sautéed in butter with garlic, onions, and a blend of Italian seasoning, chili flakes, salt, and pepper, infusing them with deep savory notes. Fluffy basmati rice—soaked beforehand for the perfect texture—is then simmered with vegetable broth, soaking up all those aromatic flavors. A sprinkle of fresh coriander adds a burst of brightness, while extra buttery sautéed mushrooms on top make each serving irresistibly rich. Stir fry the mushrooms:
Toss in your sliced mushrooms with butter. Season with salt, pepper.Set aside some for garnishing the dish when you serve it.

Soak the basmati rice in water for 30 minutes

Have your garlic, onions, and coriander leaves ready to go.

Cooking the base
In a large pot, melt a few cubes of butter. Add the garlic and sauté for about 2-3 minutes until it releases its aroma. Then, add the chopped onions and cook until translucent

Add the mushrooms
Toss in your sliced mushrooms salt, pepper, chili flakes, and Italian seasoning.
Stir everything together and let it cook until the mushrooms are coated in all the wonderful flavors -
Add in the rice
Gently mix in the soaked basmati rice (don’t break the grains).
Pour in the vegetable broth and give it a good stir. Cover the pot and let it simmer for 15-20 minutes, or until all the broth is absorbed and the rice is cooked

Once the rice is done, fluff it up with a fork and stir in some freshly chopped coriander leaves for that fresh burst of flavor
