Hey everyone! If you’re a fan of mushrooms like me, you’re in for a treat. 

Mushrooms bring such an earthy, delicious flavor to so many dishes, and this Herbed Mushroom Rice is no exception. 

It’s a simple, one-pot dish with so much flavor packed in, especially with the special vegetable broth I’m using. Trust me, you’ll want to make this again and again!

Herbed Mushroom Rice is a hearty, flavor-packed dish where earthy mushrooms and fragrant herbs transform simple basmati rice into something extraordinary. Plump mushrooms are first sautéed in butter with garlic, onions, and a blend of Italian seasoning, chili flakes, salt, and pepper, infusing them with deep savory notes. Fluffy basmati rice—soaked beforehand for the perfect texture—is then simmered with vegetable broth, soaking up all those aromatic flavors. A sprinkle of fresh coriander adds a burst of brightness, while extra buttery sautéed mushrooms on top make each serving irresistibly rich. Perfect as a standalone vegetarian main or a versatile side, this dish balances comfort and elegance in every bite.

Prep Work

  1. Stir fry the mushrooms:

    Toss in your sliced mushrooms with butter. Season with salt, pepper.Set aside some for garnishing the dish when you serve it.

     

  2. Soak the basmati rice in water for 30 minutes

  3. Aromatic Prep for Maximum Flavor

    Have your garlic, onions, and coriander leaves ready to go.

  1. Cooking the base

    In a large pot, melt a few cubes of butter. Add the garlic and sauté for about 2-3 minutes until it releases its aroma. Then, add the chopped onions and cook until translucent

  2. Add the mushrooms

    Toss in your sliced mushrooms salt, pepper, chili flakes, and Italian seasoning.
    Stir everything together and let it cook until the mushrooms are coated in all the wonderful flavors

  3. Add in the rice

    Gently mix in the soaked basmati rice (don’t break the grains).

    Pour in the vegetable broth and give it a good stir. Cover the pot and let it simmer for 15-20 minutes, or until all the broth is absorbed and the rice is cooked

  4. Final touches

     Once the rice is done, fluff it up with a fork and stir in some freshly chopped coriander leaves for that fresh burst of flavor

  5. Serve and enjoy

    Garnish the rice with the stir-fried mushrooms and a few more coriander leaves. This rice is perfect on its own, but feel free to pair it with any side dish you like
