To make nellore fish curry
5tbsp oil
1tsp mustard seeds
1tsp cumin seeds
1/4tsp fenugreek seeds
3onion(finely chopped)
10garlic cloves (crushed)
6green chilli (slit)
curry leaves (as needed)
1/2tsp rock salt
1tsp turmeric powder
3tsp chilli powder
tomato puree (from 2 tomatoes)
tamarind water (2 cups)
water (2 cups)
mango pieces (few pieces)
coriander leaves (finely chopped)
Instructions
Prep Work

Clean and cut fish
Clean emperor fish and cut into medium pieces

Marinate fishCoat fish with salt, turmeric, and chilli powder and set aside

Roast whole spicesDry roast coriander, mustard, cumin and fenugreek seeds until aromatic

Grind masalaCool spices and grind into fine powder

Chop vegetablesChop onions, crush garlic, slit green chillies, chop coriander leaves

Prepare tamarind waterSoak tamarind in warm water and extract thick water

Cut raw mangoSlice mango into pieces
