Hey everyone! If you’re a fan of mushrooms like me, you’re in for a treat. 

Mushrooms bring such an earthy, delicious flavor to so many dishes, and this Herbed Mushroom Rice is no exception. 

It’s a simple, one-pot dish with so much flavor packed in, especially with the special vegetable broth I’m using. Trust me, you’ll want to make this again and again!

Instructions

Prep Work

  1. Mushrooms for garnishing

    Toss in your sliced mushrooms with butter. Season with salt, pepper.

    Set aside some for garnishing the dish when you serve it.

  2. Soak the basmati rice in water for 30 minute

    this makes it fluffier when cooked

  3. Have your garlic, onions, and coriander leaves ready to go.

Recipe

  1. Cooking the base

    In a large pot, melt a few cubes of butter. Add the garlic and sauté for about 2-3 minutes until it releases its aroma. Then, add the chopped onions and cook until translucent

  2. Stir fry the mushrooms

    Toss in your sliced mushrooms salt, pepper, chili flakes, and Italian seasoning.
    Stir everything together and let it cook until the mushrooms are coated in all the wonderful flavors

  3. Add in the rice

    Gently mix in the soaked basmati rice (don’t break the grains).

    Pour in the vegetable broth and give it a good stir. Cover the pot and let it simmer for 15-20 minutes, or until all the broth is absorbed and the rice is cooked

  4. Final Touches

     Once the rice is done, fluff it up with a fork and stir in some freshly chopped coriander leaves for that fresh burst of flavor

  5. Garnishing

    Garnish the rice with the stir-fried mushrooms and a few more coriander leaves. This rice is perfect on its own, but feel free to pair it with any side dish you like
