I had some fresh mushrooms sitting in the fridge, and I thought, why not? A quick creamy sauce, some well-marinated grilled chicken, and dinner was sorted.

Now, this dish has become a go-to for me, especially when I want to impress someone without putting in too much effort. It’s easy, packed with flavor, and honestly, once you make it, you’ll wonder why you haven’t been making it all this time!

Prep Work

  1. Clean and slice the mushrooms.

  2. Finely chop onions and garlic.

  3. Clean and pat dry the chicken breasts.

  4. Chop coriander leaves.

How to Make Creamy Mushroom Sauce

  1. Heat a pan and melt the butter.

  2. Add chopped onions and sauté until they turn transparent.

  3. Drop in the sliced mushrooms and cook for a couple of minutes.

  4. Add finely chopped garlic and mix everything well.

  5. Season with salt and pepper, then let the mushrooms cook until they release their moisture.

  6. Pour in the chicken stock (instead, you can use vegetable broth or water), give it a stir, and let it cook for a couple more minutes.

  7. Finally, add the fresh cream and mix well.

  8. Simmer the sauce for about five minutes until it thickens.

  9. Turn off the heat and keep it aside.

How to Make Grilled Chicken Breast

  1. In a bowl, add the cleaned chicken breasts.

  2. Add chopped garlic, salt, pepper, paprika powder/chili powder, lemon juice, oil, and chopped coriander leaves.

  3. Mix everything well and make sure the chicken is coated evenly. Let it marinate for about ten minutes.

  4. Heat a grill pan, apply some oil, and place the marinated chicken breasts on it.

  5. Grill them on medium-low heat for seven minutes.

  6. Brush a little oil if needed for a crispy texture.

  7. Flip the chicken and cook the other side for another seven minutes.

  8. And that’s it—your grilled chicken is ready!

Serving

  1. To serve, spread a generous amount of the mushroom sauce on a plate and place the grilled chicken on top.

  2. Garnish with some finely chopped coriander leaves and serve with garlic bread for the best experience.
