Prep Work

  1. Chop dry fruits

    Chop figs, apricots, and cherries finely.

  2. Zest citrus fruits

    Grate the rind of one orange and one lemon.
  3. Grease cake tin

    Grease an 8-inch cake tin and line with butter paper.
  4. Whisk eggs

    Lightly whisk the eggs and set aside.

Method

  1. Cook the dry fruits

    Melt butter and brown sugar in a saucepan over medium heat. Add chopped dry fruits(figs,golden raisins,cherries,tutti frutti,apricot, black raisins) and stir until coated.

  2. Add juices & simmer

    Add orange juice, lemon juice, lemon rinds,orange rinds, and apple juice. Simmer for 15 mins until the fruits soften.
  3. Cool the fruit mixture

    Let the mixture cool completely for 25 mins before adding eggs.
  4. Mix dry ingredients

    Combine maida, cinnamon, nutmeg, cloves, ginger, and baking powder.
  5. Combine wet ingredients

    Add whisked eggs to cooled fruit mix, stir in almond powder.
  6. Incorporate dry ingredients

    Gradually add flour until the batter is smooth.
  7. Prepare to bake

    Pour batter into the prepared tin, tap to remove air bubbles.
  8. Bake the cake

    Bake in a preheated oven at 150°C (300°F) for 15 mins and bake the cake for 1.5 hours or until done.
  9. Cool & unmold

    Let cool completely before removing from the tin and peeling off paper.
  10. Serve & store

    Slice and enjoy! Store in an airtight container for up to 15 days.
