Instructions

Prep Work

  1. Chop garlic

    Finely chop garlic for the eggs and butter for sauce

  2. Whisk eggs

    Crack eggs into a bowl, add salt, pepper, chilli flakes, and garlic. Whisk well.

Method

  1. Heat butter & oil

    In a pan, add oil and butter, spreading evenly.

  2. Cook scrambled eggs

    Pour egg mixture in, cook over high heat while scrambling. Once done, remove and set aside.
  3. Melt butter for sauce

    In the same pan, melt butter.
  4. Sauté garlic

    Add chopped garlic and cook until fragrant.
  5. Season the sauce

    Add salt, pepper, and chilli flakes. Stir well.
  6. Thicken sauce

    Mix in corn flour, then add boiled milk, stirring until smooth.
  7. Add seasoning

    Keep the flame medium low.stir in Italian seasoning and chopped coriander.
  8. Combine eggs & sauce

    Return scrambled eggs to the pan, mix well, and coat evenly.
  9. Serve hot

    Enjoy with toasted bread or warm flatbread.
