Beetroot Egg Sabji by Hema Subramanian is a healthy and colorful dish made with beetroot and eggs. A nutritious, protein-rich recipe perfect for lunch or dinner.
Ingredients
To Make Beetroot Egg Sabji
3 beetroot (chopped)
5 egg
2tbsp sesame oil
1tsp urad dal
1tsp chana dal
1tsp mustard seeds
1tsp cumin seeds
2red chilli
8garlic cloves
few curry leaves
1/4tsp hing / asafoetida
1 onion (finely chopped)
5green chilli (slit)
1/4tsp turmeric powder
1/4tsp pepper powder
1/2tsp chilli powder
1/2cup water
1 1/2tsp salt
few coriander leaves (chopped)
Instructions
Prep Work

Chop the beetrootPeel and chop the beetroot into small even pieces for faster cooking.

Prepare aromaticsFinely chop the onion, slit the green chillies and peel the garlic cloves.

Get garnish readyWash and chop the coriander leaves for garnishing at the end.
Method

Prepare the temperingHeat sesame oil in a pan and add urad dal, chana dal, mustard seeds and cumin seeds.

Add aromaticsAdd dry chillies, garlic, curry leaves and asafoetida powder. Mix well until aromatic.

Saute onionsAdd onions and green chillies and saute briefly until slightly soft.

Cook beetrootAdd chopped beetroot and mix everything well.

Simmer the beetrootAdd water and salt and cook until the beetroot turns soft.

Add eggsPour a little oil in the center of the pan and add eggs, turmeric powder, pepper powder, chilli powder and salt.

Scramble and mixOnce the eggs are cooked, mix them well with the beetroot mixture.

Finish and serveAdd coriander leaves and serve the beetroot egg fry hot.
