Set Dosa is a popular South Indian breakfast dish known for its soft, fluffy texture and mild, slightly tangy flavor. Unlike the thin and crispy regular dosa, Set Dosa is smaller, thicker, and served in a set of three, hence the name. These dosas are fermented rice and urad dal (black gram) pancakes that are typically served with coconut chutney and vegetable sagu or kurma. The batter is mildly seasoned and naturally fermented, which gives it its characteristic porous and airy structure. Prep Work

  1. Soaking the ingredients

    Rinse rice, urad dal, and fenugreek seeds a few times. Soak them in water for 3 hours.

  2. Soaking flattened rice

    Wash flattened rice well and soak for 30 minutes.
  3. Grinding the batter

    Blend soaked rice, dal, and fenugreek with the poha into a smooth batter.
  4. Fermenting the batter

    Transfer to a bowl, add salt, mix well, and let it ferment for 8 hours.

Method

  1. Prepare the batter

    After fermentation, mix the batter well, add turmeric powder and salt, and mix again.

  2. Heat the tawa

    Heat a dosa tawa on medium heat until hot.
  3. Pour & spread batter

    Pour a ladle of batter onto the tawa and spread evenly to a medium thickness.
  4. Add ghee

    Drizzle a little ghee around the dosa.
  5. Cook on one side

    Let the dosa cook on one side until golden and slightly porous.
  6. Flip & cook other side

    Flip the dosa carefully and cook the other side for a few seconds.
  7. Serve & enjoy

    Serve hot with chutney or vada curry.
