Prep Work

  1. Cut the bread slices

    Remove the edges and cut the bread into small equal-sized pieces.

  2. Make chilli paste
    Blanch red chillies in water for 15 minutes, then grind into a fine paste.
  3. Prepare corn flour slurry
    Mix corn flour with water until smooth.

Method

  1. Toast the bread

    Heat oil in a pan, add bread pieces, and toast on medium-high flame until golden brown. Set aside.

  2. Sauté aromatics
    Heat oil in a pan, add garlic, ginger, and green chilies. Sauté for a few seconds.
  3. Cook vegetables
    Add onions and capsicum. Sauté for 5 minutes.
  4. Add seasonings
    Lower the flame, then add salt, pepper, vinegar, soy sauce, chilli paste, and tomato ketchup. Mix well.Bring the flame to a medium.
  5. Pour in slurry
    Add spring onion whites and water. Mix well, then pour in the corn flour slurry. Stir continuously.
  6. Combine with bread
    Add the toasted bread pieces and mix well. Let it absorb the sauce.
  7. Garnish & Serve
    Finish with spring onion greens and chopped coriander leaves. Serve hot.
